Gluten-Free Yumminess

Since we moved here 12 years ago, I have come to really appreciate that magic bean. The one negative thing (only to my waistline) is that I need to eat something sweet while drinking it. Really. NEED.
About a year ago I found out I had a wheat allergy. Not a big deal for me, because there are lots of substitutes for it. I like Rice.
The area it hurt the most was in my sweet tooth. Some gluten-free desserts are just not equal to, let’s see…donuts or brownies for example.
Slowly over the last year, I have developed a list of gluten-free tasty desserts that I enjoy with my coffee. I’d like to share a few of them (just the list now, you’ll have to make your own) with you.
- Namaste Chocolate Cake Mix. Fantastic if you are missing chocolate cupcakes. These pass the test even with gluten eating peoples. They are so good.
- Namaste also has a Perfect Flour Blend, that is really it. Perfect. I love it. There is a recipe on the back for oatmeal cookies (I add chocolate chips). They are just the thing to eat with coffee. Mmmmmm.
- Peanut Butter Cookies. I have a simple delicious recipe for you.
1 egg
1 cup sugar
1 cup peanut butter
1 Tsp baking powder
Mix together, and then roll into balls. Roll balls into sugar. Place on baking sheet and take a fork and press down in an “X”. Bake for 10-12 minutes on 350.
That’s it.

- Lastly, but not least-ly~ Granola Bars: There are a bunch of recipes out there for Gluten-Free Granola and Granola Bars, but I have an absolute favorite recipe that the whole family loves! I tweeked one,that I found significantly, so I feel confident in sharing this as my own.
2 1/2 cups Gluten-free Oats
3/4 chocolate chips
1/2 Cup of Almond butter
2 TBSP Sunflower seeds
2 TBSP Pumpkin Seeds
1 TBSP Vanilla
3/4 Cup Honey
1/4 Tsp salt
1/4 cup of brown sugar
Press mixture into a greased 8×8 pan . Bake at 350 for 20 minutes. Wait 10 minutes for them to cool, then cut into bars. Oh so good!

I had a GF pancake mix that the family here STILL has no clue it was gluten free. mwahaha… these recipes sound great. i luvs oats plus chocolate chips! I haven’t tried them but did you know there are dairy free chocolate chips (or many dark chocolate bars are too)? then you can be gluten and dairy free w/them.

Yes! I totally forgot to mention the chocolate chips I use are dairy free (I am lactose intolerant).
They are so very tasty.
I also really enjoy eating the Dark chocolate bars from Rice Dream. I do have to watch my chocolate intake, though, since all chocolate has a Nickel content and I am also allergic to Nickel:(
I must say~ it hasn’t stopped me yet!

Just tried Bob’s Red Mill GF Brownie Mix. I just baked the brownies and left out the topping suggested in the recipe to keep it lactose-free. The family wolfed it down!
