Well actually, Dijon is a region in France. It’s the northern anchor of the Burgundy region, also a style of mustard (made with wine), and a university town.

It’s here that you can get the four year Diplome National d’Oenologue where your studies would include mastery of fermentation, malolactic fermentation, barrel fermentation, and growing chardonnay and pinot noir vines, with particular attention to phenolics composition, varietal aromas and terrior.
